Both are very nice bikes. I was trying to get my wife interested in learning to ride and possibly on a 310R but she is too short. I always liked the look of the F800 variants (especially the F800R) and your F800GS looks brand new.

Have you owned the 700 for awhile or is it a recent purchase to replace the 310?

The F700 was purchased in 2015 and has low kms (hence why it looks new GG, plus freshly detailed). After the F700 a Hayabusa entered the garage in 2016 (which I modded in to more of a GSX-R1300, 180 hp at the back wheel and soooo much torque) then Bec's G310 and the R1200RS in 2018. The F700GS is a really good everyday motorcycle and very comfortable with the touring seat option. Not too tall either for an adventure bike. I had a lot more trouble getting on and off the G310.
Currently restoring a Honda VF1000R, which will take a while (an old pic of me on the track, that Dainese suit doesn't fit anymore ).
