Just wondering if there is a way to change the consumption units? From l/100km to l/Km for instance.

I am not aware of any ability to change to litres/kilometer.
The typical metric units are litres/100 km or km/litre. I suspect litres/kilometer would be too small so not seen as practical or maybe amenable to a XX.X display format.
For instance from Fuelly, and using 45 mpg.US as a basis - that translates to 5.227 litres/100 km or 0.05227 litres/km or 19.13 km/litre.

My bad, I meant km/l, that’s how I was raised so trying to work out how many 100kms are in my trip to figure out how much fuel I’m gonna use just seems weird
Is it possible to swap between the two? I assume there must be some sort of adjustment as it would need to be able to change between metric and imperial.

I don't think that one can change units from the bike's user interface. It may be possible using a GS-911 or at the dealership, but I have no personal experience doing this.
